Veggie Tales: Day 1


Today, we made stuffed "grilled" peppers from Thug Kitchen.  Despite my complete hatred of brown rice, they actually turned out pretty tasty.





Due to the lack of some supplies and laziness, we substituted a couple of items.  We used normal brown rice rather than basmati brown rice, apple cider vinegar instead of sherry vinegar, and normal paprika instead of smoked paprika.  We don't own a grill, so instead we put the peppers in the oven at 300 degrees for 12 minutes, which turned out fine.

Also, as usual we made some mistakes.  We added the zucchini at the same time as the onion because we weren't paying attention.  Also, I added way to much vinegar to the beans, making it taste like salad dressing. 




So, oops.  But just to make sure everything didn't turn out to be a total mess, we consulted our official taste tester.
 
He had no qualms with the mistakes, so we figured it was fine.


The stuffed peppers were refreshing and colorful, but I didn't think they were very filling.  I don't think they were a very good dinner item; maybe they would be more suited as a lunch or potluck item.  I had two and my stomach was growling a couple of hours later.  Alvin said it must have been just me because he was full.

Tonight's meal will be a stark contrast to these colorful peppers, so stay tuned!
